How to make onigiri (Japanese rice balls)

Written on Jun 22, 2009 // Random.

Very simple, very yummy.
Depending on where you live it can be tricky to get some of the ingredients. Luckily I was able to find nori and sushi rice as people seem to like sushi over here in the Netherlands, unfortunately they’re comparatively pricey at the average grocery store, with the nori costing up to 4.5 euros for 4 small sheets. Some of the stuff listed in the other videos I know are going to be impossible to source here.
The only thing I didn’t get from the cooking video is exactly how the hell they can roll balls out of hot rice with their bare hands. They must have fire proof hands (or wait for it to get cold, but it doesn’t seem that way in the video):

Ah, cooking with dog! One of the best cooking series on youtube in my opinion. About rolling the rice: they do it with the hot rice and the bare hands, I’ve seen it live. But if you roll it fast, your hands won’t get that hot, and if you wet your hands with cold water before, you can even hold it for a few seconds to put the ingredients inside :)

    Fire-proof hands, yo.
My mom’s got them. She asked me to hold some pan for her the other day, I was like, “Wait, is it hot?” “No…” I reach out for it…well, it burned me! But she’s got calloused hands that are used to high heat…

So people who are experienced in the art of making those are surely able to without being phased. It’s like playing guitar…when you’re learning, your fingers will split and maybe bleed [at least if you have steel strings like you SHOULD] but you’ll grow resistant to it…
